Basil Jelly

Ingredients:

  • 2 cups Basil
  • 4 cups Water
  • 1 box Pectin or 2 tblsp liquid Pectin
  • 5 cups sugar

Directions:

Add basil (2 cups) and water (4 cups)  to a pot. Bring to a boil, cover, and remove from the heat. Let rest at least 10 minutes. Strain out the leaves and move basil juice back into the pot with pectin. Bring to a boil and then add sugar (5 cups). Once the mixture reaches a rolling boil, it is ready to be jarred.

Benefits of Basil

Basil is filled with antioxidants, which helps to combat chronic diseases such as diabetes, heart disease, and arthritis. Calcium, vitamin K, and vitamin A are also found in basil. Added bonus is that it can also help with upset stomach.

Fun Fact: The name “basil” originates from Greece and means “king.”
